seafood risotto

I can't give you the actual recipe for this because I made it up and didn't write it down.

Among the ingredients I used:
rice
homemade chicken stock
onions
garlic
frozen bell peppers
saffron salt
saffron
calamari, shrimp, and bay scallops
celery
a lot of Parmesan cheese

The end result:


It involved a lot of stirring but it was well worth it. The beauty of risotto is that you can basically empty out your entire fridge/ freezer into it.
